Executive Chef

Taking inspiration from both his Sicilian heritage and Australian upbringing, Matteo Tine brings to Pixie Food & Wine a modern offering that effortlessly combines traditional Italian and contemporary Australian cuisines. 

Growing up in Essendon, Matteo was surrounded by the hospitality industry from a young age. A creative child at home in the kitchen it came naturally that Tine would follow in his family's footsteps and at age 17 he began his chef apprenticeship at Grossi Florentino. Here he worked his way up, and was subsequently awarded a chefs hat during his time as head chef at Grill (downstairs). 

In 2022 he was appointed as executive chef of Pixie Food & Wine where he continues to bring his ever evolving offering to the Norther Rivers.

Diana Desensi remembers cooking with her grandfather from the age of 3 in the Northern Suburbs of Melbourne where she grew up, hailing this experience and her Italian heritage as the reason she turned to the hospitality industry.

After enriching experiences at the likes of Cargo, Grossi Florentino, Pt Leo Estate and Montalto, Diana made the sea-change to Byron Bay in 2022 to join the team at Pixie Food & Wine.

Here, with the oversight of Matteo, Diana combines Australian and Italian flavours to create dishes that are at once familiar and reminiscent of the Adriatic coast.
